Ingredients:

  • Three cups of basil- you can use canned versions or use the freshly chopped basil leaves
  • ½ cup of pine cups, preferably roasted lightly
  • 4 garlic cloves
  • A tablespoon of nutritional yeast
  • 2 tablespoons of fresh lemon juice
  • A pinch of pepper and salt for taste
  • Water- 4 tablespoons to thin

Method of preparation:

Take a pan and start roasting the pine nuts. However, do not burn them. The pine nuts must be fried golden brown. You need not add additional oil as the pine-nuts will release the natural oils that are stored in them. Now, along with the lightly sautéed pine nuts, add the other ingredients too. Blend all of them using a food processor. You can freeze the mixture via icetrays. You can also place the pesto-mix in a freezer bag for later use. You can use pesto on sautéed noodles, pastas, pepper stuffing and across a lot more delicacies.

 

Vegan Mac n Cheese

Ingredients:

  • 7 OZ dry whole grain macaroni (You can preferably choose 200 grams pack)
  • 7 OZ broccoli florets (200 grams)

For the cheese sauce

  • Boil two medium sized potatoes. You can have them diced into cubes
  • ½ medium sized carrot- You can either grate them or have them chopped
  • Chopped onions- 1 small cup
  • A clove of medium-sized garlic minced
  • Soaked cashews- 65 g (You must have soaked the cashews in water for at least 30 minutes)
  • ¾ cup water (It measures 180 ml)
  • 1/4th cup of soy milk (60 ml)
  • 4 tablespoons of nutritional yeast
  • 1 tablespoon of lemon juice
  • Sea-salt, paprika and preferred spices for taste

Method of preparation

  • You can boil a pack of pasta in a heating pan. Add the broccoli florets 5 minutes before you switch it off the gas-stove.
  • You must cook the pasta until it becomes al dente. And the broccoli florets must be soft with a little crunch.
  • Drain off the excess water and set the pan aside

For the cheese sauce

  • When you have the pasta cooking, take another heating pan. Add to it onions, garlic, and carrots.
  • Sautee the veggies until they are fully cooked. You can add some water to make the vegetables soft and mushy. Alongside add the cooked potatoes. Allow all the veggies to warm up on the pot. You can place a lid on the vegetable pot for about 10 minutes and allow them to cook on a simmer.
  • Now, along with the veggies, take sea-salt, nutritional yeast and other ingredients as needed for the sauce. Blend into a jar until you get a smooth lump-free paste.

How do you assemble the pasta?

  • Transfer to bowl of pasta and cooked broccoli to a large bowl. You can add the tasty vegan sauce across the top.
  • Mix the ingredients using the spoon. This makes sure, you get a coat of sauce across the pasta bowl. You can serve the vegan Mac and Cheese pasta hot.
  • If you have left-overs, you can store them in air-tight containers and drop them into the freezers. As the mac and cheese freezes well, you can allow it to thaw the next say. You can enjoy this tasty recipe for the next 3-4 days!

You can make cheesy vegan sauces right there at the comfort of your home. You can add nutritional yeast to get a cheesy and sassy flavor. Ingredients

  • 1 cup of cooked white beans- You can take something like cannellini
  • ½ cup of almond or cashew milk
  • 5 tablespoons of nutritional yeast
  • Quarter teaspoon garlic powder
  • Two teaspoons of olive oil- gives a buttery spread to your sauces
  • Rosemary, thyme, or turmeric – as spices or condiments

Method of preparation

Drain or rinse the beans if they are canned. Now blend all the ingredients except for nutritional yeast. You can use a hand blender or an electric one. Make sure no lumps are formed. You can now add five tablespoons of nutritional yeast. Mix the powdered nutritional yeast flakes in batches. You can pour the contents on to a tawa. Stir on lower or medium simmer until the desired consistency is achieved. You can add more of milk if you want the sauce to be of a thinner consistency. After about five minutes of stirring, switch off the gas stove. Now, you can allow the vegan cheesy sauce to cool down. Then, you can store them in mason jars or air-tight containers.
